The capture rate of the table is 100% as required to pass UL testing.
Can the table handle large volumes of customers?
Large volumes will not be an issue for the FANMA Series teppanyaki tables. The table proved itself during testing for UL as they cooked over 1,300 frozen hamburgers on it continuously for an 8 hour period. Also, the proprietary cooking surface not only retains its temperature better than its competitors, but it also does not radiate heat. This is a benefit for the chef cooking for long hours, as the chefs will not feel the heat coming from the cooking surface.
Is the griddle recessed from the customer table top & where does the table capture the grease-laden air?
The griddle portion of the table is not recessed from the table top. The vent that captures the grease-laden air is on the chef’s side at cooking surface level.
What is the power output of the cooking surface & what dimensions do the cooking surface come in?
Heating element power output is 27,637 BTU. There are 2 sizes of heated surface dimensions, they are as follows (L x W): 23in x 13in or 23in by 18in. This area is directly touching the heating elements. The cooking surface itself varies with the size and shape of the table. Stock table sizes range from a seating capacity of 7 up to 12. Both heated surface dimensions are available in all shapes and sizes. Shapes include rectangle, U-shape, semi-circle, oval and bow-shaped.
Where does the cleaned air from the table return?
The exhausted air returning to the room that the table sits in is exhausted on the chef’s side at the bottom of the table, angled slightly downward.
What is the temperature raise from returning air of the room that the table sits in?
The temperature returning to the room has a raised temperature of 2.5-3° F; this varies within the range with external variables.
What is the decibel level of the table?
With an ambient room sound level of 60dB, the table will increase the overall sound level to 70dB. As ambient sound levels increases, the effect on the sound level from the table decreases.
Does the table contain an internal air cooling system?
The table does not need an internal air cooler or mixing system. The heat retention from our proprietary cooking surface material helps to minimize the temperature raise.
What is the airflow measured in Cubic Feet per Minute?
The CFM for the exhaust fan set within the table is 1550.
What is the power outlet configuration needed for the table & what is the best way to mount the outlet?
The table comes with one NEMA L15-30P or NEMA 15-50P (depending on number of heating elements) plug attached to a power cord with a length of approximately 8 feet. Power outlets are typically recessed under the table so to not show the power cord. There are no other additional utility hookup needs for the table.
What is the cleaning cycle for the table?
The cleaning cycle for the table surface and outside is similar to industry standard and is recommended in between cooking to keep aesthetic appeal. Internal cleaning including duct system and removable filters is recommended 1-2 times per week at normal usage. For higher levels of usage, more frequent cleaning is recommended. Surface cleaning time is typical of other teppanyaki tables. Internal cleaning time is 10-15 minutes. All removable filters are dishwasher safe except the carbon filter which is replaced as needed, depending on usage. We estimate replacing carbon filters between two and six times per year.
Is there a fire system housed within the table itself? What type of chemical system does it use?
The fire suppression system is housed within the table and comes with the unit. The system uses a wet chemical and the system has been tested and held to standards UL710B & UL300.
Is there a minimum ceiling height required where the table sits? Are there any requirements about placement of air diffusers in relation to the table?
Minimum ceiling height required for the table is 96 inches or 8 feet. There are no requirements for placement of air diffusers in relation to the table. It is recommended not to have a high velocity air diffuser directed at the surface of the table as it may disrupt the 100% capture rate as tested by UL.
What is the estimated A/C tonnage needed per table?
Due to the amount of site specific variables in calculating the A/C tonnage needed, we are not able to provide this. If you provide site specifications, we would be happy to assist in this calculation. Keep in mind that the air being pulled into the system is returning to the room after being filtered and cleaned.
Can the table be bought without the customer table top surface and provided by the buyer?
The table can be purchased without the customer table top surface. The options available for the table countertop include, but are not limited to onyx or tempered glass (both able to be LED under lit) and marble. Due to the volume and pre-contracted pricing we have, it would be more expensive to supply your own customer table top.
